Yummy, Mini Blueberry Bloggy Muffins!


Someone requested for me to do a favorite recipe of mine! I took up their offer and decided to give it a shot. I've never done a picture series with a DIY before, but hey, let me know what you think!

{Grease your mini muffin pans with butter, vegetable oil, or coconut oil. In this picture, I'm using butter. I would normally use coconut oil--because it's a healthier option}

{Preheat your oven to 400 degrees Fahrenheit}

{Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Set dry mixture to the side for a second. In another bowl, combine Vegetable Oil, milk, and one egg}


{Pour liquid mixture into the combination of dry ingredients}

{Stir all ingredients up really well}

{If your batter is too thick, feel free to add more milk as needed. It won't hurt to make the consistency a little creamy. :) Make sure there are no pockets of flour}

{Next, pour in your berries carefully}




{Set aside batter and start making the crumble: Add in another 1/2 cup of sugar, 1/3 cup of flour, 1/4 cup of butter (half stick) chilled and grated, and 1 and 1/2 teaspoon of cinnamon}

{Sift flour into sugar}
 {Add cinnamon}

{Fork together}

 {Then add butter to your mixture of dry ingredients}

{Stir that up, but DO NOT TOUCH WITH HANDS. If you do so, the butter will begin to melt and become difficult to work with}

{Spoon in your batter into previously greased mini muffin tins}


{Then carefully distribute crumble onto each one like so}


{Place in the middle oven rack for about 9-12 minutes. Keep an eye on them, depending on how full you filled them, they will cook for different times}

{Use your waiting time to clean up!}

{Or eat a warm spinach salad from the evening before. Yummy!}  

{Once your timer is up, or they look done to you, take them out and place them on a plate or baking rack. Stare and admire them until they cool enough to shove in your mouth desperately}
